Burnt Garlic Stir Fired Vegetables

This is a simple, healthy and five minute recipe that is crunchy and refreshing. You may  eat it as a hot salad or a meal by itself if planning to eat light. It can also be made with leftover vegetables when you miss your weekly vegetable shopping. You can try  different combinations of vegetables of your choice, but remember the trick is to have different colours and flavours that balance each other since we do not add any strong

spices in this and you taste the flavour of each ingredient.

All you need are,

  • 6-7 cloves of garlic (crushed)
  • Butter
  • 1 carrot (sliced lengthwise)
  • 1 capsicum (chopped into squares)
  • American corn (1cup)
  • Beans (2 handfuls, chopped diagonally)
  • Fresh coriander (chopped)
  • Salt
  • Freshly crushed black pepper

Melt some butter in a semi hot pan/wok and add the garlic, American corn, beans and carrot in the same order all together. Do not stir and let the corn be at the bottom of the pan so that it gets cooked. Cover immediately and let it simmer for 3-4 minutes. Open the lid and add capsicum, salt and pepper.

Now on full flame stir the vegetables. When the corn starts popping your stir fry is cooked. Burn them a little on high flame for 2-3 minutes till the garlic gets burnt.

Add coriander and stir a few more times.

TIP: Once cooled, you can also add some cooked pasta to this along with some basil, balsamic vinegar and olive oil and have a tasty but healthy pasta. This tastes best when cooled in the fridge for 1 hour.
